Savoury & Sweet Pork Marinade

Here's a quick recipe for a pork marinade. It's mostly savoury but also with a hint of sweetness. Just whisk it all up together so that it's well-mixed, pour it into a big ziplock bag and add the pork. Then marinate in the refrigerator for at least 3 hours or as long as overnight.

Marinade Ingredients

  • 1/3 cup of any type of citrus juice (lemon, lime, orange, or pineapple)
  • 2 tbsp of liquid honey (use firmly packed brown sugar if you don't have honey)
  • 1 tbsp finely chopped fresh garlic
  • 2 tsp ground ginger
  • 1/2 tsp dried crushed rosemary
  • Salt and pepper, to taste.

Tip: reserve some of the marinade to reduce into a sauce. Boil it gently over your stovetop until slightly thickened, then pour over the barbecued pork. You might want to double the recipe if you like to have more sauce.
