Zesty All-Purpose Barbeque Marinade

There are lots of recipes for marinades, but sometimes it's just nice to have a good, all-purpose recipe handy - one that will work for BBQ chicken, steak, pork, or even fish.

Marinade Ingredients

  • 1/2 cup olive oil
  • 3 tbsp light soy sauce
  • 3 tbsp Worchestershire sauce
  • 3 tbsp Dijon mustard
  • 2/3 cup fresh lemon juice
  • 1 tbsp finely grated lemon zest
  • 2 tbsp finely minced fresh garlic
  • 1 tsp onion powder
  • Salt and pepper, to taste.

How to Make

Whisk together all of the ingredients. Works best to marinate meat for at least 2 hours, up to overnight - with the exception of fish (marinate for 15-30 minutes).

You can also reserve some of the marinade to use as a sauce. Just set a small amount aside before marinating the meat. Just before the meat is finished on the barbecue, cook the marinade with a small amount of cornstarch to thicken it.
